Japanese researchers at the University of Electro-Communications and confectionery maker Ginza Cozy Corner have developed AI-powered robots that replicate the hand movements of skilled confectioners, aiming to preserve traditional Japanese sweets-making techniques amid a labor shortage. The robots use motion-capture data and machine learning to mimic the delicate folding and shaping of 'nerikiri' bean-paste sweets, achieving consistency that matches human artisans.
